Chili is the perfect dish for a cool fall evening. It’s warm, filling, and infinitely customizable. Plus, it’s a great way to use up any ground meat you have in the fridge. This recipe is our go-to chili recipe because it’s delicious, easy to make, and always a hit with our kids. You can get everything we used for this dinner at Walmart!


Ingredients:
2 teaspoons olive oil
1 yellow onion, chopped
3 garlic cloves, minced
1 medium red bell pepper, chopped
1 pound extra lean organic ground beef (you can also substitute
ground turkey or chicken)
4 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1/2 teaspoon salt (add more according to preference)
1 (28-ounce) can diced tomatoes or crushed tomatoes
11/2 cups chicken broth
2 (15 oz) cans dark red kidney beans, rinsed and drained
1 (15 oz) can sweet corn, rinsed and drained
And then add your favorite toppings! We love cheese, avocado, tortilla chips, cilantro, lite sour cream
Directions:
Step One: Brown the Ground Beef
Start by browning the ground beef in a large pot over medium heat. Once the beef is browned, drain off any excess grease and set the beef aside.
Step Two: Sautee
Next, add the onion and pepper to the pot and saute until soft. Then, add the garlic and saute for an additional minute.
Step Three: Add the Remaining Ingredients and Simmer
Once the vegetables are sauteed, add the canned tomatoes, tomato paste, kidney beans, corn, and spices. Stir everything together and let it simmer for at least 30 minutes so that all of the flavors can come together.
